Easy Egg Bake
Your first meal of the day is the most important. Get your hormones on track by eating quality protein and fat. This egg bake can be made ahead of time for a hearty breakfast all week long! No need to skip breakfast or fuss about making it. It's ready to grab and go.
1 dozen eggs
1 pound of sausage (I just placed my order for pastured pork sausage through Harvest Moon)
1/2 c onions (chopped)
1 clove of garlic (chopped)
1 c cherry tomatoes
1 c broccoli (chopped)
Preheat oven to 350F. Sauté the onions, garlic and sausage until it is evenly cooked (I use coconut oil). Spread it evenly into a 13x9 greased baking dish. Wisk eggs and cover mixture. Add the tomatoes and broccoli. Bake for 30-40 minutes or until it doesn't jiggle.
