Chicken Fried Rice

Fried rice, just make it with extra protein please! My daughter currently loves picking out and eating the green peas and corn.


2-3 chicken breasts

3 eggs

1.5 c veggies of choice (I prefer a combo of frozen green peas, carrots and corn)

2 c rice, cooked ( I cook mine in bone broth, make it Whole30 by using cauliflower rice)

2 T Sesame oil + some to cook chicken

2 T rice vinegar

1/4 c coconut aminos

Chop and cook the chicken in a pan over medium head with some sesame oil. Once it is done, add the veggies so they heat up. While it's cooking, mix the eggs with the sesame oil, rice vinegar and coconut aminos. Add the cooked rice and mix in the egg mixture. Cover it to let it simmer for a few minutes, mix and cover again. Once the eggs are fully cooked, it's ready to go. Enjoy!
