Strawberry Rhubarb Crumble

I went berry picking with a friend at Prairie Berry a few weeks ago. It was an awesome experience! We went early and it was cloudy, cool and breezy which kept the bugs away. Only $10 for a giant box of berries that we picked in about 15 minutes. They were juicy and delicious. Due to the warm weather and all of the rain, berry season is early which means it will be ending early so if you want to go, get there soon!

Ingredients

2 c chopped strawberries

3/4 c chopped rhubarb

1/4 c nuts of your choice (I used almonds and pecans)

1 T salt

2 T honey


In a baking dish with a lid, add your berries, rhubarb and coconut milk. Run the rest of the ingredients through a food processor (I used a mini Ninja) and spread it all over the top. Bake it in the oven at 350 F for 30-40 minutes. Eat up!


Feel free to play with different fruits and toppings. This is another forgiving recipe and is great with any seasonal fruits.
