Pecan Chocolate Chip Banana Bread

I love finding old bananas discounted at my local Food Fare (on Lilac)! I just stocked up today. Who doesn't love a good banana bread? Especially when it is free of gluten, grain, dairy, soy and refined sugar? You don't have to tell them. They won't even notice!

Ingredients 3 ripe bananas 4 eggs 4 T coconut oil, melted 1 c almond flour 1/2 c coconut flour 3 T honey 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp vanilla 1/2 tsp cinnamon

1/3 c pecans (or other nut) - optional


Mash up the bananas. Add your eggs and oil and mix, mix, mix until smooth. Add the rest of the ingredients and mix, mix, mix some more. Fold in the pecans and chocolate chips. Place in a bread pan or muffin tin lined with parchment (much easier clean up!) and bake for 30-40 minutes at 325 F.


Oven temps will vary. Adjust accordingly. Muffins will bake quicker than bread. And, as always, when baking without conventional flour, it is much better to under bake your products than over bake.
