Orange Ginger Chicken Salad

This is my favorite summertime salad. It's refreshing, quick to put together and keeps for a few days in the fridge. I would even argue that it gets better as it marinates!
1 package of coleslaw mix
1 can mandarin oranges (check label for added sugar)
1 c slivered almonds
2-3 cups shredded chicken (I cook a whole chicken and add 1/2 of it. Alternatively, you can simply pick up a rotisserie chicken from the grocery store)
1. Place all of the dressing ingredients into a jar and shake, shake, shake it up! They will mix better if at room temperature. You can also use an immersion blender to mix it well.
2. Toss all of the salad ingredients in a large bowl
3. Cover the salad with the dressing and allow to marinate or eat right away.
