Homemade Mayo

Homemade mayo is way easier than you might expect. It takes less than 5 minutes. It's delicious. And you can use a quality oil which is essential when you are trying to eat an anti-inflammatory diet. Unless you are buying Primal Kitchen's mayo, you better believe that the oils in standard mayo are junk.

Ingredients

2 eggs

2 T apple cider vinegar

1 T mustard

1 tsp salt

1 clove of garlic

2 cups of mild tasting, high quality oil - I prefer avocado


Put it all in a jar or bowl, minus the oil. Slowly add the oil while mixing it with an immersion blender. If you don't have an immersion blender, go get yourself one right now. Just kidding (barely). You can do this in a regular blender or food processor. Just try to pour the oil in as slowly as possible.
