Ginger Spice Grain-No-La

If you don't eat any grains, you might miss things like cereal and granola. Not anymore! This Ginger Spice Grain-No-La omits the nasty stuff and is full of quality fats, proteins and flavor. Bon appetit!

Ingredients

1/4 c coconut oil, melted

1 T honey

1/2 c pecans

1 T each: cinnamon, ginger

1/2 tsp each: nutmeg, cloves, allspice, salt

Optional topping: crystallized ginger


Preheat oven to 350 F. During the preheat is when I melt the coconut oil in a large glass bowl. Once oil is melted, add molasses and honey and mix well. Add all of the nuts (which you can swap for ones you prefer) and spices (which you can alter to your taste). Mix it all up so the nuts are coated nicely. Spread it all out on a greased (I use coconut oil, again) cookie sheet. Bake for 10-15 minutes and watch for burning. Top with crystallized ginger at this point, if you so choose. Allow the grain-no-la to fully cool before serving. This allows the oils and sugars to harden nicely.


I enjoy mine with coconut milk and apple chunks. It reminds me of Apple Jacks cereal!
