Ginger Coconut Rice
Is there anyone out there who doesn't like rice? Probably not. It tastes delicious, gives us that
glucose hit and goes with almost anything. But, that glucose hit comes hard. Making rice with bone broth can help. Coconut milk can add some extra fat, helping that, too. This is one of my favorite ways to make rice.
1 cup rice
1 cup bone broth
1 cup coconut milk, canned
Salt to taste
3 cloves garlic, chopped
Good chunk of ginger, chopped
Bring all of the ingredients to a gentle simmer and allow the rice to absorb all of the liquid. Top with green onions.
I love this rice with Sticky Ginger Meatballs. I also like to hide liver in there. Gotta get all of those extra nutrients!
