Caulimash is a good alternative to mashed potatoes. I do love my potatoes, but for whatever reason, I can't get enough of this stuff. Roasted cauliflower is one of my favorite veggies.
Ingredients
1 head of cauliflower, chopped into pieces
4 cloves of garlic, peeled and smashed
Olive oil, enough to drizzle on your cauliflower
Pepper
3/4 c canned coconut milk (or 1/4 c coconut milk + 1/2 c bone broth)
Preheat oven to 375F. Put your chopped cauliflower, garlic, oil and veggies into an oven safe dish and roast for about 40 minutes or until it starts to brown. Allow it to cool, then add it to a food processor or blender with the coconut milk (and bone broth, if you choose) and run it until it becomes mashed, but not soupy.

I went to the St. Norbert's Farmers' Market last weekend and met the makers of Smak Dab. She was pretty much the sweetest person ever. I bought the honey horseradish mustard and have been put it on my pork chops and bison smokies. YUM. Then, I had the urge to add 2 T to my caulimash. YUM. YUM. YUM. I have to say, I'm pretty selective about the pre made products I purchase. I think the only things I ever buy are Franks Red Hot sauce, organic ketchup and about once a year I buy mustard. But, you best believe I'll be buying from Smak Dab again. Plus, you know I like supporting my local homies.
