How to Roast a Chicken

There aren't many things as delicious as a freshly roasted chicken. It takes some time to cook, but it sure it scrumptious! And it's easy. Let's be honest, I don't make anything too complicated.

Each month I order 2 chickens from Harvest Moon and I make them like this:

Step 1: Pre heat the oven to 350F

Step 2: Place chicken in a roasting pan (these are fairly inexpensive to buy and worth it).

Step 3: Smother the chicken in the oil of your choosing (I usually use olive oil which I know isn't the best at high heat, but, alas, I do it anyway). Some balsamic vinegar here is good, too!

Step 4: Sprinkle it with salt, pepper and paprika (paprika is a GAME CHANGER)

Step 5: Bake for 2 hours and 30 minutes to 3 hours and 30 minutes. This is dependent on the size. I trust you can check it and make the right judgement.

Dipped in guacamole

Dipped in it's own drippings

Added to the Orange Ginger Chicken Salad

Thrown in my Breakfast Hash

My favorite thing to do when I'm done eating the meat: Make bone broth
