Cauli Stuffed Peppers

I like rice. But, I don't like how hungry I am shortly after I eat it. It really messes with my blood sugar. My favorite alternative is cauliflower. It tastes great and packs a much higher nutrient punch. As Liz Wolfe says, when it comes to food, be a nutrient seeker.

Ingredients

1 cauliflower

1/2 onion

4 bell peppers

4 cloves of garlic

1/2 lb ground meat or 4 large sausages

1 c pasta sauce

Coconut or olive oil

Chop up the cauliflower and 2 cloves of garlic, drizzle in the oil of your choice and bake for about 40 minutes at 375.

In the meantime, chop off the tops of your peppers and dice them (the tops) along with the onions and garlic. Saute it all over medium heat. Add the meat and pasta sauce.

When your cauliflower is done, allow it to cool a bit before running it through a food processor until it is rice like. Mix it up with the rest of your veggies and fill on up your peppers.

Bake the filled peppers for 10-15 minutes at 350.

Eat up!
